1 lb ground chicken
1 egg
1/2 yellow onion, diced
1/2 Granny Smith apple, peeled and diced
2 large sweet potatoes
1 tbsp olive oil
2 oz cheddar cheese, freshly grated
1/2 cup fine breadcrumbs
1/4 cup parsley, chopped
1/4 cup walnuts, finely diced
1 inch piece of ginger, grated
1 tsp salt
Freshly cracked black pepper to taste
Cayenne pepper to taste
2 tbsp butter
2 tbsp maple syrup
1/2 tsp cinnamon
1/2 tsp coriander
1/2 tsp cumin
1/2 tsp nutmeg
Instructions
Preheat your oven to 400°F (200°C). This temperature is ideal for roasting sweet potatoes until they are tender and flavorful.
Place the sweet potatoes on a baking sheet. Bake them until a knife easily cuts through to the center. This usually takes about 60–75 minutes depending on their size. Start this step first as they need time to cook.
In a small sauté pan, heat 1 tablespoon of olive oil over medium heat. Add diced onion and apple along with a pinch of salt. Sauté for about 5–7 minutes until softened. Remove from heat and allow to cool.
In a large bowl, combine ground chicken, egg, breadcrumbs, cheese, parsley, walnuts, ginger, salt, and the cooled onion/apple mixture. Use your hands to mix until everything is well incorporated.
Shape the mixture into approximately 2-inch balls and place them on a lightly greased baking sheet. You should yield around 14–16 meatballs.
Bake in your preheated oven at 400°F (200°C) for about 15 minutes.
Once cooked, peel the sweet potatoes and place their flesh in a bowl. Add butter, maple syrup, cinnamon, coriander, cumin, nutmeg, salt, and cayenne. Mash with a fork until smooth or desired consistency is reached.
