  • 1 lb ground chicken
  • 1 egg
  • 1/2 yellow onion, diced
  • 1/2 Granny Smith apple, peeled and diced
  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • 2 oz cheddar cheese, freshly grated
  • 1/2 cup fine breadcrumbs
  • 1/4 cup parsley, chopped
  • 1/4 cup walnuts, finely diced
  • 1 inch piece of ginger, grated
  • 1 tsp salt
  • Freshly cracked black pepper to taste
  • Cayenne pepper to taste
  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/2 tsp coriander
  • 1/2 tsp cumin
  • 1/2 tsp nutmeg

Instructions

  1. Preheat your oven to 400°F (200°C). This temperature is ideal for roasting sweet potatoes until they are tender and flavorful.
  2. Place the sweet potatoes on a baking sheet. Bake them until a knife easily cuts through to the center. This usually takes about 60–75 minutes depending on their size. Start this step first as they need time to cook.
  3. In a small sauté pan, heat 1 tablespoon of olive oil over medium heat. Add diced onion and apple along with a pinch of salt. Sauté for about 5–7 minutes until softened. Remove from heat and allow to cool.
  4. In a large bowl, combine ground chicken, egg, breadcrumbs, cheese, parsley, walnuts, ginger, salt, and the cooled onion/apple mixture. Use your hands to mix until everything is well incorporated.
  5. Shape the mixture into approximately 2-inch balls and place them on a lightly greased baking sheet. You should yield around 14–16 meatballs.
  6. Bake in your preheated oven at 400°F (200°C) for about 15 minutes.
  7. Once cooked, peel the sweet potatoes and place their flesh in a bowl. Add butter, maple syrup, cinnamon, coriander, cumin, nutmeg, salt, and cayenne. Mash with a fork until smooth or desired consistency is reached.
