  • 1 cup apple cider
  • 2 apples, peeled and diced
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tbsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 2 eggs
  • ½ cup milk
  • 2 tbsp melted butter
  • Oil for frying

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until it thickens to about ¼ cup.
  2. In a large bowl, mix together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together eggs, milk, reduced cider, and melted butter until smooth.
  4. Gently combine wet ingredients with dry ingredients and fold in diced apples.
  5. Heat oil in a deep fryer or heavy pot to 350°F (175°C). Drop spoonfuls of batter into hot oil and fry until golden brown on both sides (about 3–4 minutes).
  6. Drain on paper towels and dust with cinnamon sugar while warm.
