  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well mixed.
  2. In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until fully combined.
  3. Gradually pour the wet ingredients into the dry ingredients. Whisk gently until just combined; it’s okay if there are a few lumps.
  4. Carefully fold in the diced apples until they are evenly distributed throughout the batter.
  5. Let the batter rest for about 10-15 minutes to enhance the texture.
