  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 200g block of feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Wash and cube the potatoes into bite-sized pieces. Par-boil in salted water for 6-8 minutes, then drain and let steam dry.
  3. In a baking dish, combine par-boiled potatoes with olive oil, thyme, oregano, salt, black pepper, and chili flakes; toss well.
  4. Roast for 30-40 minutes until golden brown and crispy.
  5. Place feta cheese in the center of the dish; squeeze half a lemon over it.
  6. Roast for an additional 15 minutes until everything is melded together.
  7. Squeeze out softened garlic cloves into a bowl and mash until smooth; mix into the roasted potatoes along with juice from the remaining lemon half and fresh basil.
  8. Drizzle with honey before serving warm.
