  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider or white vinegar
  • 1 whole egg (whisked)
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Prepare the crust: Melt the cold unsalted butter in a saucepan until golden brown and nutty. Let cool. In a mixing bowl, combine flour and sea salt, then mix in the brown butter, water, and vinegar until just combined. Form into a ball, wrap in plastic wrap, and chill for at least 30 minutes.
  2. Prepare the filling: Mix sliced peaches, quartered strawberries, sugar, cornstarch, lemon juice, lemon zest, and salt in a bowl. Let sit for about 15 minutes.
  3. Assemble the pie: Preheat oven to 375°F (190°C). Roll out half of the chilled dough for the bottom crust and fit into your pie dish. Fill with fruit mixture. Roll out remaining dough for the top crust; place over filling and cut slits for steam.
  4. Bake: Brush top crust with whisked egg and sprinkle with Turbinado sugar if desired. Bake for about 50–70 minutes until golden brown and bubbly. Cool before serving.
