  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta
  • 1/3 cup pasta water reserved from cooked pasta

  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Spread the frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet.
  3. Drizzle with olive oil, then season with salt, pepper, and dried thyme before mixing everything thoroughly.
  4. Bake for about 20 minutes until tender and caramelized.
  5. Cook your pasta according to package instructions until al dente.
  6. Reserve 1/3 cup of pasta water before draining the pasta.
  7. Blend the roasted vegetables with the reserved pasta water until smooth.
  8. Toss the creamy sauce with your cooked pasta and serve immediately.
