  • 200g red grape tomatoes
  • 200g yellow grape tomatoes
  • 1 avocado
  • ¼ bunch cilantro (coriander)
  • Dressing: olive oil
  • lemon juice
  • Dijon mustard
  • maple syrup

Instructions

  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. Brush corn with olive oil and grill for 10-15 minutes until charred; let cool before cutting off kernels.
  3. Slice red onions thickly, drizzle with olive oil, season with salt and pepper, and grill for about 5-7 minutes per side until soft and charred.
  4. In a large mixing bowl, combine charred corn, grilled onions, halved tomatoes, diced avocado, and chopped cilantro.
