  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 3 tbsp sugar
  • 1 tbsp baking powder
  • 6 tbsp cold unsalted butter
  • 2 tbsp desiccated coconut
  • 1 egg
  • 1/2 cup full-fat coconut milk
  • 1/2 tsp vanilla extract
  • 3/4 cup diced fresh mango

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper if desired.
  2. In a large mixing bowl, combine flour, salt, sugar, and baking powder.
  3. Cut cold butter into small chunks and mix it into the flour mixture until it resembles coarse crumbs.
  4. In another bowl, beat the egg and mix in coconut milk and vanilla extract. Pour into the dry ingredients along with desiccated coconut and stir gently until just combined.
  5. Fold in diced mango, then transfer dough onto a floured surface and shape into approximately eight pieces.
  6. Place on the baking sheet with space between each piece, sprinkle with sugar on top.
  7. Bake for about 18-22 minutes or until golden brown. Cool on a rack before serving.
