  • 1/2 cup fresh squeezed orange juice
  • 1/4 cup fresh squeezed lemon juice
  • 1 Tablespoon Califia unsweetened almond milk
  • 1/4 cup loosely packed fresh parsley
  • 3/4 cup olive oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon minced shallots
  • pinch of salt
  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 1 Tablespoon olive oil
  • 23 cups fresh mixed greens

Instructions

  1. Combine all dressing ingredients in a mason jar.
  2. Use an immersion blender to mix until smooth.
  3. Preheat the grill to medium high/high heat.
  4. Lightly brush each slice of pineapple with olive oil using a basting brush.
  5. Sear pineapple directly over the flame for 2 minutes on each side.
  6. Place corn on the cob on direct heat and cook for 5 minutes per side until slightly charred.
  7. Once seared, remove the grilled pineapple from heat.
  8. After cooling slightly, cut off charred kernels from corn cob.
  9. In two salad bowls, fill with fresh mixed greens as a base.
  10. Add 2 slices of grilled pineapple to each bowl along with corn kernels, pepitas, blueberries, and avocado slices.
  11. Drizzle as much creamy citrus dressing over each salad as desired.
