  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
  3. Place the squash halves cut side down on a baking sheet and roast for 30-35 minutes until tender.
  4. In a skillet over medium heat, sauté diced onion in olive oil until translucent. Add garlic and mushrooms; cook until browned. Stir in spinach until wilted.
  5. In a mixing bowl, combine cream cheese, Parmesan cheese, cooked mushroom-spinach mixture, salt, and pepper.
  6. Scrape out spaghetti strands from the squash and mix them with the filling.
  7. Spoon the mixture back into each squash half, topping with mozzarella cheese.
  8. Bake again for an additional 10-15 minutes until cheese is melted and bubbly.
