  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • Salt to taste

Instructions

  1. Prepare the dressing by mixing mayonnaise, sour cream, lime zest, lime juice, dill, mustard, garlic, and salt in a bowl. Refrigerate to chill.
  2. Boil water in a pot; add shrimp and cook for 2 to 3 minutes until pink.
  3. Create an ice water bath; transfer cooked shrimp into it to cool for about 3 minutes before draining.
  4. Combine chopped shrimp, cucumbers, green onions, and chilled dressing in a mixing bowl. Stir gently until well combined.
