  • 1 kg green unripe tomatoes
  • 500 g cooking apples (peeled and cored)
  • 500 g diced onions
  • 200 g sultanas
  • 1 tsp chili flakes
  • 15 g fresh ginger (grated)
  • 2 tsp salt
  • 400 ml vinegar (substitute for cider vinegar)
  • 400 g light brown sugar
  • Spice bag with coriander seeds, mustard seeds, black peppercorns

Instructions

  1. Dice the green tomatoes, onions, and apples into uniform pieces for even cooking.
  2. In a large preserving pan, combine the diced onions, green tomatoes, apples, sultanas, chili flakes, salt, grated ginger, and vinegar.
  3. Stir well and mix in the light brown sugar until fully combined.
  4. Prepare your spice bag with coriander seeds, mustard seeds, and black peppercorns.
  5. Add the spice bag to the mixture and bring it to a boil over medium heat.
  6. Reduce the heat to low and let it simmer for 1½ to 2 hours, stirring occasionally.
  7. Check for thickness; when it parts slightly when stirred, it's ready.
  8. Remove the spice bag and ladle the hot chutney into sterilized jars.
  9. Seal each jar tightly with its lid.
