  • 1 pack (3 oz) dry instant ramen noodles (discard seasoning packet)
  • 2 tablespoons creamy peanut butter (unsweetened, natural)
  • ½ tablespoon dark soy sauce
  • ½ teaspoon garlic powder
  • 1 tablespoon sriracha (or to taste)
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon lemon juice
  • Salt (to taste)
  • ½ teaspoon toasted sesame oil
  • Garnishes: chopped green onion and crushed toasted peanuts

Instructions

  1. Boil water in a pot and cook the ramen noodles according to package instructions until al dente, reserving ¼ cup of noodle water before draining.
  2. In a large bowl, whisk together peanut butter, soy sauce, garlic powder, sriracha, honey or maple syrup, lemon juice, salt, and toasted sesame oil. Gradually add reserved noodle water until smooth.
  3. Taste the sauce and adjust flavors if necessary.
  4. Toss drained ramen noodles with the peanut butter sauce and mix in chopped green onions and crushed peanuts until well-coated.
  5. Serve warm garnished with additional green onions and peanuts.
