  • 5 pounds mixed apples (Granny Smith, Gala)
  • 1/2 teaspoon lemon zest
  • 3 tablespoons lemon juice
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 & 1/2 cups all-purpose flour
  • 1/2 cup buttermilk
  • 1 egg
  • 1/2 cup cold butter

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl, mix sliced apples with lemon juice and zest, granulated sugar, brown sugar, flour, cinnamon, nutmeg, cardamom (if using), and salt.
  3. Transfer the apple mixture to a baking dish.
  4. In another bowl, combine flour, sugar, salt, and baking powder. Mix in buttermilk and egg until just combined.
  5. Spread the topping over the apples. Dot with cold butter pieces and sprinkle with additional sugar.
  6. Bake for 45–55 minutes until golden brown.
