  • 8 large fresh peaches (peeled, pitted, and sliced)
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick Earth Balance® butter (cut into small pieces)
  • 1/3 cup boiling water

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine sliced peaches with brown sugar, sugar, cinnamon, corn starch, lemon juice, and nutmeg. Stir gently until well coated.
  3. Pour the peach mixture into an ungreased baking dish (9 x 13) and bake for about 10 minutes.
  4. Meanwhile, in a medium mixing bowl, whisk together flour, sugars, baking powder, and salt. Use a pastry blender to mix in the butter until crumbly.
  5. Pour in boiling water and stir until combined.
  6. Spoon the batter evenly over the baked peaches.
  7. Mix remaining sugar with cinnamon and sprinkle over the top before returning to the oven.
  8. Bake for approximately 35 minutes or until topping is golden brown.
  9. Allow to cool slightly before serving warm.
