  • 1/2 cup granulated sugar
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats
  • 1/2 cup unsalted butter (for filling, softened)
  • 4 ounces cream cheese (brick style, full fat)
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1/4 teaspoon salt (for filling)
  • 1 tablespoon whipping cream (if needed; half and half works too)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, mix flour, ginger powder, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, beat softened butter with brown and granulated sugars until fluffy.
  4. Add molasses and an egg to the butter mixture; mix until combined.
  5. Gradually add dry ingredients to the wet mixture and fold in rolled oats.
  6. Scoop tablespoon-sized portions onto prepared sheets and bake for 9 minutes.
  7. Allow cookies to cool on sheets for 5 minutes before transferring them to wire racks.
  8. For the filling: beat softened butter and cream cheese until smooth; gradually add powdered sugar and vanilla extract until desired sweetness is reached.
  9. Once cookies are cooled completely, spread the cream filling on one cookie and top it with another.
