  • 3 bell peppers
  • 1 pound ground chicken
  • ⅔ cup uncooked white rice
  • 1 small red onion
  • 2 cloves garlic
  • ½ cup cherry tomatoes
  • ½ cup kalamata olives
  • ½ cup feta cheese
  • Fresh dill
  • Extra virgin olive oil

Instructions

  1. Preheat the oven to 350℉.
  2. Slice bell peppers in half and remove seeds. Arrange cut-side up in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Cook ground chicken with salt and pepper until no longer pink. Drain excess liquid.
  4. Add diced onion, minced garlic, zucchini, and Italian seasoning; cook for two minutes.
  5. In a bowl, combine cooked rice, chicken mixture, tomatoes, olives, half of the feta, and dill; mix well.
  6. Stuff each pepper with the filling and top with remaining feta. Add water to the baking dish to steam.
  7. Cover with foil and bake for 40-45 minutes until peppers are tender.
