  • 1 gallon green tomatoes
  • 1 medium head cabbage
  • 5 medium bell peppers (red and green)
  • 1 medium onion
  • 6 pods hot pepper
  • 3 cups vinegar
  • 2 cups sugar
  • 2 tablespoons plain salt

Instructions

  1. Chop the green tomatoes and place them in a large pot.
  2. Shred the cabbage and add it to the pot.
  3. Seed and chop the bell peppers; add them to the mixture.
  4. Chop the onion and include it in the pot.
  5. Stir in the salt with all chopped vegetables.
  6. In a separate pot, combine vinegar and sugar; bring to a boil until dissolved.
  7. Pour the boiling mixture over the vegetables in the large pot.
  8. Cook everything on medium heat for about 20 minutes, stirring occasionally.
  9. Fill sterilized jars with the hot mixture and process in boiling water for 10 minutes.
  10. Allow at least four weeks for flavors to develop before enjoying.
