  • 11/4 cups (150 grams) all-purpose flour
  • 1/2 cup (113 grams) cold salted butter, diced
  • 1/3 cup (80 grams) sour cream
  • 1 tablespoon high-heat oil
  • 2 pounds beef brisket or boneless chuck roast, cut into 1-inch pieces
  • 8 ounces button or baby bella mushrooms, cleaned and quartered
  • 4 medium to large carrots, peeled and sliced on the diagonal
  • 1 large onion, diced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 2 tablespoons fresh thyme leaves
  • 3 garlic cloves, minced
  • 1½ teaspoons (5 grams) coarse kosher salt
  • 1 teaspoon ground black pepper
  • 2 cups beef broth
  • 1 tablespoon turbinado or brown sugar

Instructions

  1. To prepare the crust, mix flour and diced cold butter until crumbly. Gradually add sour cream until a dough forms. Chill for 30 minutes.
  2. In a Dutch oven, heat high-heat oil over medium-high heat. Season beef with salt and pepper, then brown on all sides for about 5 minutes.
  3. Remove beef and sauté onions and carrots until softened. Stir in mushrooms, garlic, thyme, tomato paste, and flour; cook for another minute.
  4. Return beef to the pot and add broth and sugar. Bring to a simmer and braise on low for about 2 hours until tender.
  5. Preheat oven to 400°F (200°C). Roll out chilled dough, fill baking dish(es) with filling, cover with dough, seal edges, and cut steam vents.
  6. Brush with egg wash and bake for 25-30 minutes until golden brown.
