- 1 tablespoon lemon juice
- ¾ cup rolled oats
- ½ cup almond flour
- ¼ cup chopped nuts (almonds or pecans)
- 2 tablespoons coconut oil
- 1–2 tablespoons maple syrup (optional)
- Cinnamon and salt
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
- Toss sliced peaches with lemon juice, cornstarch, maple syrup, and cinnamon. Pour into the baking dish.
- In another bowl, mix oats, almond flour, nuts, cinnamon, and salt. Add melted coconut oil and maple syrup until crumbly.
- Spread the oat mixture over the peach filling.
- Bake for 30–35 minutes until golden brown and bubbling.
- Let cool for 10 minutes before serving.
