  • 45 medium organic russet potatoes, peeled and cubed
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp unsalted butter
  • 1/2 red onion, chopped
  • 6 garlic cloves, minced
  • 4 cups organic vegetable stock/broth
  • 1 cup organic heavy cream
  • 12 cups freshly grated sharp cheddar cheese
  • 2 tsps On Everything All-Purpose Blend
  • 1 tsp smoked paprika
  • 2 Tbsps white cooking apple vinegar

Instructions

  1. Peel and cube the potatoes. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, melt olive oil and butter. Sauté onion and garlic until fragrant (about 3–5 minutes).
  3. Transfer sautéed mixture to a slow cooker. Add potatoes, vegetable stock, cream, and seasonings; stir well.
  4. Cook on low for about 6 hours or high for about 3 hours until potatoes are tender.
  5. Stir in cheddar cheese until melted before serving.
