  • 4 bell peppers (any color)
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • 2 large eggs
  • ½ cup breadcrumbs

Instructions

  1. Preheat the oven to 400°F (204°C). Cut bell peppers in half lengthwise, remove seeds, and place cut side up on a parchment-lined baking sheet. Brush with olive oil.
  2. Bake for about 20 minutes until softened. Drain any excess water from inside the peppers and reduce the oven temperature to 350°F (176°C).
  3. Microwave spinach for 15 to 30 seconds until wilted; chop it roughly. In a mixing bowl, combine spinach with ricotta, mozzarella, parmesan, green onions, basil, eggs, salt, pepper, herbs, and breadcrumbs.
  4. Stuff each pepper evenly with the filling mixture.
  5. Sprinkle additional breadcrumbs on top of each stuffed pepper.
  6. Return to the oven for another 30 minutes or until golden brown.
