Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup light brown sugar
  • 1 cup smooth peanut butter
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup granulated sugar (for rolling)
  • 1/4 cup unsalted butter (softened)
  • 1/2 cup smooth peanut butter
  • 1 1/2 cups powdered sugar
  • 2 tablespoons whole milk
  • 1/4 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt; set aside.
  3. In another bowl, cream together the softened butter, brown sugar, and smooth peanut butter until light and fluffy. Mix in the egg and vanilla extract.
  4. Gradually incorporate the dry mixture into the wet ingredients until just combined.
  5. Roll dough into small balls (about 1 inch), coat each ball in sugar, place on the baking sheet, and flatten slightly with a fork.
  6. Bake for about 10 minutes or until edges are golden brown; allow to cool before transferring to wire racks.
  7. For the cream filling, beat together softened butter, peanut butter, powdered sugar, milk, and vanilla until smooth.
  8. Once cookies are cool, spread cream on one cookie flat side and top with another cookie to assemble.
