Ingredients

  • Almond milk (unsweetened)
  • Black tea bags (or chai tea)
  • Pure maple syrup
  • All-purpose flour
  • Artisan bread flour
  • Rapid rise yeast
  • Organic pumpkin puree
  • Unsalted butter
  • Cream cheese (for glaze)
  • Brown sugar

Instructions

  1. Warm almond milk and steep black tea for 5 minutes. Mix in maple syrup and chai spice.
  2. In a bowl, combine both flours, yeast, sea salt, brown sugar, and pumpkin spice.
  3. Whisk wet ingredients: pumpkin puree, eggs, melted butter, vanilla extract, and warm almond milk mixture.
  4. Combine wet and dry ingredients; knead until smooth. Let rise until doubled (30 minutes).
  5. Roll out dough into a rectangle and add filling: spread butter, sprinkle sugar and spices.
  6. Roll tightly into a log; cut into pieces and let rise again for 15 minutes.
  7. Bake at 350°F (175°C) for 25–30 minutes until golden brown.
  8. Prepare glaze by mixing powdered sugar and cream cheese with cooled chai tea mixture.
