  • 34 lbs beef chuck roast
  • 4 large onions, thinly sliced
  • 1 cup beef broth
  • 1 cup dry white apple vinegar (or additional broth)
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Set your Instant Pot to 'Sauté' mode and add olive oil. Season the beef chuck roast with salt and pepper and sear until browned on all sides, about 4-5 minutes per side. Remove and set aside.
  2. In the same pot, add sliced onions and cook until caramelized, about 10-15 minutes. Add minced garlic and cook for another minute.
  3. Deglaze the pot with apple vinegar (or extra broth), scraping up any browned bits.
  4. Return the beef to the pot along with beef broth, thyme, and bay leaves. Secure the lid and cook on 'Manual' or 'Pressure Cook' high for 60 minutes.
  5. Let pressure release naturally for 15 minutes before carefully releasing any remaining pressure.
  6. Remove bay leaves, shred the beef with forks, and serve hot.
