Ingredients

  • Gluten-free flour
  • Ground almonds
  • Leinsamen (flaxseeds)
  • Vegan butter
  • Fresh apples
  • Tofu
  • Cashews
  • Coconut milk
  • Maple syrup

Instructions

  1. Preheat oven to 180°C (350°F). Prepare the springform by greasing it.
  2. For the crust: Combine gluten-free flour, ground almonds, sugar, and salt. Mix in softened vegan butter and flaxseed eggs until crumbly. Press into the bottom of the prepared springform.
  3. For the apple filling: Cook diced apples with lemon juice, water, sugar, and spices until soft.
  4. For the cheese filling: Blend tofu, soaked cashews, coconut milk, maple syrup, lemon juice, cornstarch, and vanilla until smooth.
  5. Assemble: Layer apple filling on crust followed by cheese filling. Bake for 45 minutes.
  6. Let cool before refrigerating for two hours. Serve chilled with homemade caramel sauce.
