  • 1/2 cup finely chopped onion
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh basil (chopped)
  • 1/8 teaspoon ground nutmeg
  • 1 cup heavy whipping cream
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup crushed beef rind crumbs

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium-high heat, sear the seasoned shrimp in olive oil for about 1–2 minutes per side until pink; then set aside.
  3. Sauté onion in melted butter until soft, add garlic, basil, and nutmeg; cook briefly.
  4. Pour in heavy cream and simmer until slightly thickened; stir in cheeses until smooth.
  5. Place shrimp in the baking dish, pour sauce over them, and top with crushed beef rinds mixed with remaining parmesan.
  6. Bake for about 25 minutes until golden brown.
