  • 2 medium kohlrabi (peeled and grated)
  • 1 small-medium zucchini (grated)
  • 2 medium carrots (peeled and grated)
  • 1/2 cup diced onion
  • 2 eggs (lightly beaten)
  • 1/2 cup flour
  • 3 tablespoons olive oil
  • 1 cup plain Greek yogurt
  • 1/2 tablespoon lemon zest
  • 1/2 tablespoon chopped parsley
  • 1 tablespoon avocado or olive oil
  • 1/8 teaspoon salt

Instructions

  1. Grate kohlrabi, zucchini, and carrots into fine pieces. Combine in a mixing bowl with diced onion.
  2. In another bowl, mix beaten eggs with flour, garlic powder, salt, and pepper until smooth. Stir into the veggie mixture until well-combined.
  3. Heat 2 tablespoons of olive oil in a frying pan over medium heat until shimmering.
  4. Scoop and flatten portions of the mixture into the hot oil; fry for about 3–4 minutes per side until golden brown.
  5. Prepare the lemony herb yogurt sauce by mixing Greek yogurt with lemon zest, chopped parsley, olive oil, and salt in a small bowl.
  6. Serve warm with the sauce on top or on the side for dipping.
