  • 2 tablespoons freshly squeezed lemon juice

  • 1 teaspoon lemon zest (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the eggs, milk, melted butter (or oil), lemon zest, and lemon juice; whisk until smooth.
  4. Pour the wet mixture into the dry mixture and gently fold until just combined—avoid overmixing.
  5. Fill each donut cavity about two-thirds full using a piping bag or spoon.
  6. Bake for 10–12 minutes or until lightly golden brown; check doneness with a toothpick.
  7. While the donuts cool in the pan for about five minutes, mix the coating ingredients: sugar and lemon zest.
  8. Once cool enough to handle, roll each donut in the lemon sugar mixture until fully coated.
