  • Juice of 1 lemon (about 23 tablespoons)
  • 1 teaspoon dried oregano

  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat. Add the diced onion and sauté for about 3 minutes until translucent. Stir in the minced garlic and cook for an additional 30 seconds.
  2. Add the rice to the pot and stir to coat it in the oil. Toast for about 1 minute to enhance flavor.
  3. Pour in the chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Bring to a gentle boil.
  4. Reduce heat to low, cover with a tight-fitting lid, and simmer undisturbed for 18 to 20 minutes until liquid is absorbed and rice is tender.
  5. Remove from heat; let sit covered for another 5 minutes. Fluff with a fork before serving and garnish with parsley if desired.
