  • 2 boneless, skinless chicken breasts
  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • ½ red onion
  • 2 cloves garlic
  • Olive oil
  • 2 tablespoons dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. In a mixing bowl, combine chicken, zucchini, cherry tomatoes, red onion, garlic, olive oil, and seasonings. Mix well.
