  • 1 bunch green kale
  • 2 ears of corn
  • ½ cup cotija cheese
  • ¼ cup red onion
  • 12 avocados
  • ½ cup plain Greek yogurt
  • ¼ cup fresh lime juice
  • ¼ cup cilantro
  • 2 garlic cloves

Instructions

  1. Wash and chop the kale, removing stems. In a large bowl, massage with olive oil and lime juice for 2-3 minutes until softened.
  2. Boil water and cook shucked corn for 5-7 minutes until tender. Let cool, then cut kernels off.
  3. Combine massaged kale, corn kernels, cotija cheese, red onion, and diced avocados in the bowl.
  4. In a separate bowl, whisk together Greek yogurt, lime juice, cilantro, garlic, salt, and chipotle powder to create the dressing.
  5. Pour dressing over the salad mixture and toss gently. Serve immediately topped with crushed tortilla chips.
