  • 160 g all-purpose flour
  • 60 g powdered sugar
  • 115 g unsalted butter, cold and cubed
  • 1 egg yolk
  • 1 medium apple, peeled and diced
  • 80 g mixed berries (fresh or frozen)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1 tsp cornstarch

Instructions

  1. In a mixing bowl, combine flour, powdered sugar, and cold butter until crumbly. Mix in egg yolk until just combined. Chill dough for 30 minutes.
  2. Preheat oven to 180°C (350°F).
  3. Prepare filling by mixing diced apple, mixed berries, granulated sugar, lemon juice, cinnamon, and cornstarch in another bowl.
  4. Roll out dough on a floured surface to about 0.5 cm thick; cut circles to fit your pie dish or muffin tin.
  5. Press dough into the prepared dish/tin and fill with fruit mixture.
  6. Bake for 25–30 minutes or until golden brown; cool before serving.
