  • 23 nectarines, diced (about 2 cups)
  • 1 tomato, diced (about 1 cup)
  • 1 cup cilantro, minced
  • 1/4 cup shallot, diced (or red onion)
  • 1 bird's eye chili, finely diced (or jalapeño)
  • 1 tablespoon lime juice
  • 1 teaspoon honey or sugar

Instructions

  1. Prepare all ingredients by washing and dicing the nectarines and tomato into small pieces. Mince the cilantro and shallot finely.
  2. In a mixing bowl, combine the diced nectarines, tomato, minced cilantro, shallot, and chopped chili.
