  • 14 oz kielbasa sausage, sliced
  • 2 cloves garlic, minced
  • 3 cups elbow macaroni
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • Optional: fresh parsley or green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add kielbasa and cook until browned, about 4-5 minutes. Remove and set aside.
  2. Sauté minced garlic in the same pot for about 30 seconds.
  3. Stir in pasta, chicken broth, milk, smoked paprika, salt, and pepper. Bring to a boil; then simmer covered for about 8-10 minutes until pasta is tender.
  4. Lower heat and mix in cheddar cheese, mozzarella, and butter until melted and creamy.
  5. Return kielbasa to the pot; stir well and heat through before serving.
