  • 2 eggs
  • 1 pinch salt
  • ground black pepper
  • 2 cups Japanese panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • ranch dressing (for dipping)

Instructions

  1. Preheat your oven to 425°F (218°C). Slice zucchinis into 3-inch lengths and cut into 1/2-inch thick strips.
  2. In a mixing bowl, beat together eggs, salt, and black pepper. Line a baking sheet with parchment paper.
  3. On a large plate, combine panko breadcrumbs and grated Parmesan cheese. Dip each zucchini strip in the egg mixture, then roll in the panko mixture until well-coated.
  4. Place the coated strips on the prepared baking sheet and bake for 20 to 25 minutes, turning halfway through until golden brown and crispy. Serve immediately with ranch dressing.
