  • 10 oz dry Barilla Penne Pasta
  • 1/4 cup olive oil
  • 1/2 medium red onion (sliced)
  • 1 large carrot (sliced into matchsticks)
  • 2 cups broccoli florets (cut into matchsticks)
  • 1 medium red bell pepper (sliced)
  • 1 medium yellow squash (quartered)
  • 1 medium zucchini (quartered)
  • 34 cloves garlic (minced)
  • 1 cup grape tomatoes (halved)
  • Fresh lemon juice
  • Dried Italian seasoning

Instructions

  1. Cook penne pasta in salted boiling water according to package directions. Reserve 1/2 cup of pasta water before draining.
  2. In a deep skillet over medium-high heat, add olive oil.
  3. Sauté sliced red onion and carrot for about 2 minutes until softened.
  4. Add broccoli florets and bell peppers; continue sautéing for another 2 minutes.
  5. Incorporate yellow squash and zucchini, cooking for an additional 2-3 minutes until veggies are tender.
  6. Stir in minced garlic, halved grape tomatoes, and dried Italian seasoning; sauté for another 2 minutes.
  7. Combine the sautéed vegetables with the drained pasta in a pot or serving bowl; toss with reserved pasta water and lemon juice until desired consistency is reached.
  8. Mix in parmesan cheese and chopped parsley before serving.
