Pastel Alemán con Relleno de Manzana is a delightful German apple cake that captures the essence of home-baked goodness. This scrumptious dessert features a soft, moist texture and is filled with tender, sweet apples enhanced by a hint of zesty lemon.

  • 2 large eggs
  • 100 g granulated sugar
  • 1 tsp vanilla sugar or 1 tsp pure vanilla extract
  • 100 ml whole milk
  • 20 g unsalted butter, melted and cooled
  • 80 g all-purpose flour
  • 1 tsp baking powder
  • A pinch of fine sea salt
  • Fresh zest of 1 unwaxed lemon
  • 45 medium apples (approximately 750 g/1.65 lbs)
  • Juice of ½ fresh lemon
  • 23 tbsp powdered sugar for dusting

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Peel the apples and slice them thinly, then toss them with fresh lemon juice to prevent browning.
  3. In a mixing bowl, whisk together the eggs, granulated sugar, vanilla sugar or extract, milk, and melted butter until well combined.
  4. In another bowl, mix flour, baking powder, salt, and lemon zest together.
  5. Gradually add the dry ingredients to the wet ingredients while mixing until smooth.
  6. Pour half of the batter into a greased baking dish. Arrange half of the sliced apples over the batter. Cover with remaining batter and top with remaining apple slices.
  7. Bake for about 45–50 minutes or until golden brown. A toothpick inserted should come out clean.
  8. Once cooled slightly, dust with powdered sugar before serving.
