  • 1/2 cup canola oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 2 cups diced fresh peaches
  • 2 cups powdered sugar
  • 2 tablespoons melted butter
  • 1/3 cup finely diced peaches
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons heavy cream or milk (optional)

Instructions

  1. Preheat your oven to 350ºF.
  2. In a medium bowl, mix together sugar, milk, canola oil, egg, and vanilla extract until combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add this to the wet mixture until just combined.
  4. Fold in the diced peaches gently.
  5. Pour the batter into a greased 9"x5" bread pan and bake for 55–60 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool for 10 minutes before transferring to a wire rack.
  7. Prepare the glaze by combining powdered sugar, melted butter, finely diced peaches, and vanilla extract until smooth.
  8. Spread the glaze over the cooled bread and serve.
