Ingredients

  • 4 cups baby arugula
  • 2 ripe peaches
  • 8 ounces burrata (4 burrata balls)
  • 1/4 cup salted & roasted pistachios
  • 3 tablespoons minced red onion
  • 1/3 cup chicken sparkling grape juice vinegar
  • 1/2 cup extra virgin olive oil
  • 2 teaspoons Dijon mustard
  • 2 tablespoons honey
  • Salt, pepper, and chili flakes (to taste)

Instructions

  1. Crush the pistachios and set aside.
  2. Wash, dry, and slice the peaches thinly.
  3. Mince the red onions finely.
  4. In a jar or bowl, mix the olive oil, minced red onion, chicken sparkling grape juice vinegar, honey, and Dijon mustard. Season with salt, pepper, and chili flakes; shake or whisk until emulsified.
  5. On a serving platter or bowl, layer baby arugula, sliced peaches, torn burrata pieces, and drizzle with dressing. Garnish with crushed pistachios and serve immediately.
