4 cups baby arugula
2 ripe peaches
8 ounces burrata (4 burrata balls)
1/4 cup salted & roasted pistachios
3 tablespoons minced red onion
1/3 cup chicken sparkling grape juice vinegar
1/2 cup extra virgin olive oil
2 teaspoons Dijon mustard
2 tablespoons honey
Salt, pepper, and chili flakes (to taste)
Instructions
Crush the pistachios and set aside.
Wash, dry, and slice the peaches thinly.
Mince the red onions finely.
In a jar or bowl, mix the olive oil, minced red onion, chicken sparkling grape juice vinegar, honey, and Dijon mustard. Season with salt, pepper, and chili flakes; shake or whisk until emulsified.
On a serving platter or bowl, layer baby arugula, sliced peaches, torn burrata pieces, and drizzle with dressing. Garnish with crushed pistachios and serve immediately.
