  • 1 (8-ounce) ball of mozzarella
  • 1 bunch fresh basil
  • ½ cup balsamic vinegar
  • 1 teaspoon honey
  • Sea salt & freshly ground black pepper

Instructions

  1. Prepare the Balsamic Reduction: In a small saucepan, combine balsamic vinegar and honey over medium heat. Bring to a low boil, then simmer for 10-15 minutes until reduced by half. Let cool.
  2. Slice Peaches and Mozzarella: Slice peaches into quarters and mozzarella into thin rounds. Freeze mozzarella for easier slicing if desired.
  3. Assemble the Salad: On a large plate, alternate slices of peaches, mozzarella, and basil leaves in a circular pattern.
  4. Finish with Seasoning: Drizzle with cooled balsamic glaze, then sprinkle with sea salt and black pepper before serving.
