2 medium peaches
1 (8-ounce) ball of mozzarella
1 bunch fresh basil
½ cup balsamic vinegar
1 teaspoon honey
Sea salt & freshly ground black pepper
Instructions
Prepare the Balsamic Reduction: In a small saucepan, combine balsamic vinegar and honey over medium heat. Bring to a low boil, then simmer for 10-15 minutes until reduced by half. Let cool.
Slice Peaches and Mozzarella: Slice peaches into quarters and mozzarella into thin rounds. Freeze mozzarella for easier slicing if desired.
Assemble the Salad: On a large plate, alternate slices of peaches, mozzarella, and basil leaves in a circular pattern.
