  • 3 peaches (pitted, peeled, and thinly sliced)
  • 12 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour (for topping)
  • 1/4 cup light brown sugar (packed)
  • 1/4 cup granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)
  • 1/4 tsp ground nutmeg (optional)
  • 1/4 tsp fine sea salt
  • 1/2 cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F and prepare a 9×13 baking dish with foil and cooking spray.
  2. In a bowl, mix together flour, powdered sugar, and cinnamon. Cut in softened butter until crumbly. Press into the bottom of the baking dish and bake for 20 minutes.
  3. Layer sliced peaches over the baked crust.
  4. In another bowl, blend softened cream cheese until smooth, then mix in sugar, eggs one at a time, and vanilla extract.
  5. For the topping, combine flour, brown sugar, granulated sugar, cinnamon, nutmeg (if using), salt, and melted butter until crumbly.
  6. Pour cream cheese mixture over peaches and sprinkle crumble topping evenly over it. Bake for 45-55 minutes until golden brown on top. Allow to cool completely before refrigerating and slicing into bars.
