  • 1/2 cup salted butter (for crust and streusel)

  • 32 ounces full-fat cream cheese
  • 4 large eggs
  • 1 cup sour cream
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 400°F. Slice 4 peaches, toss with sugar and spices, and roast for 7-15 minutes. Set aside.
  2. For the crust, reduce oven to 350°F. Mix crust ingredients and press into a springform pan; bake for 10 minutes.
  3. Prepare the streusel by mixing melted butter with remaining ingredients until crumbly; bake for about 8 minutes.
  4. Beat cream cheese until smooth, add sugar, then incorporate eggs one at a time. Mix in sour cream and vanilla.
  5. Layer half the cheesecake batter over the crust, add roasted peaches and streusel, top with remaining batter. Bake in a water bath at 350°F for about 90 minutes.
  6. Cool gradually in the oven with door ajar for one hour before refrigerating.
