  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup pecans
  • 2 tablespoons honey
  • 1 teaspoon curry powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon salt
  • 5 ounces baby arugula
  • 4 ripe peaches (peeled)
  • ½ teaspoon olive oil
  • ¾ cup blueberries
  • ¾ cup crumbled goat cheese

Instructions

  1. Prepare the dressing by whisking together olive oil, balsamic vinegar, honey, salt, and black pepper in a bowl until well combined.
  2. For candied pecans, melt butter in a saucepan over medium heat. Add pecans along with honey, curry powder, turmeric powder, and salt. Stir to coat.
  3. Spread pecans on a baking sheet and bake at 350°F (175°C) for about 10 minutes until golden brown.
  4. Assemble the salad by placing arugula in a large bowl. Top with sliced peaches, blueberries, crumbled goat cheese, and drizzle with dressing. Finish with candied pecans.
