  • 3 quarts firm green cherry tomatoes
  • 9 cloves of garlic
  • 6 teaspoons pickling spice
  • 1/4 teaspoon black peppercorns
  • 1 1/2 teaspoons red pepper flakes
  • 12 sprigs fresh dill
  • 6 slices jalapeno peppers
  • 3 cups white vinegar
  • 1 cup apple cider vinegar
  • 2 cups filtered water
  • 4 tablespoons sugar
  • 2 tablespoons pickling salt

Instructions

  1. Prepare the jars by placing garlic, pickling spice, red pepper flakes, dill sprigs, and jalapeno slices in each jar.
  2. Pack the green cherry tomatoes tightly into the jars.
  3. In a large pot, combine the vinegars, water, sugar, and salt. Bring to a boil until dissolved.
  4. Fill each jar with hot brine up to about ¼ inch headspace and remove air bubbles using a chopstick or canning bubbler.
  5. Wipe jar rims clean, seal with lids and rings until fingertip-tight.
  6. Cool at room temperature before refrigerating for at least 7 days for optimal flavor.
