  • ¾ cup Granulated Sugar
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 1 ¼ cups All-Purpose Flour
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • ½ cup Brown Sugar
  • 2 tbsp Melted Butter
  • 1 small can Pineapple Rings (cut into smaller pieces)
  • Maraschino Cherries (halved)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter and granulated sugar until fluffy. Mix in the egg and vanilla until smooth.
  3. Combine flour, baking powder, and salt in another bowl; gradually add to wet mixture until just combined.
  4. For the topping, mix melted butter and brown sugar until smooth; spoon onto lined baking sheet.
  5. Top each brown sugar base with pineapple pieces and a maraschino cherry. Add cookie dough on top of each.
  6. Bake for 12-15 minutes until golden brown; cool slightly before flipping to reveal toppings.
