  • 20g fresh yeast (or 7g active dry yeast)
  • 1 cup milk
  • 2 cups flour
  • 2 large eggs
  • 1/4 cup sugar
  • 5 small/medium soft apples
  • Frying oil

  1. Warm milk to about 100-110°F (38-43°C). Combine with yeast and 1 tablespoon sugar; let sit for 10 minutes until foamy.
  2. In a large bowl, mix the milk-yeast mixture with flour, eggs, remaining sugar, vanilla extract, cinnamon, and salt until just combined.
  3. Cover and let rise in a warm place for 45-70 minutes until doubled in size. Alternatively, refrigerate overnight.
  4. Peel and finely cube apples; fold into batter.
  5. Heat oil in a non-stick frying pan over medium heat. Spoon about 1/4 cup of batter for each pancake; cook until golden brown on both sides.
  6. Dust with powdered sugar before serving.
