  • 1/4 cup Japanese mayo (or regular mayo)
  • 3 tbsp sweetened condensed milk (or condensed coconut milk)
  • 2 tbsp honey
  • 1/2 cup walnut halves
  • 2/3 cup cornstarch
  • Vegetable oil for frying

Instructions

  1. In a small bowl, mix all sauce ingredients and set aside.
  2. For candied walnuts, heat sugar and cold water in a non-stick pan until syrup thickens, then add walnuts to coat. Cool on parchment paper.
  3. Season shrimp with salt and pepper; whisk egg whites until foamy. Mix in cornstarch to form a runny batter and coat shrimp.
  4. Heat vegetable oil in a pan; fry shrimp in batches until golden brown, about 2-3 minutes each. Drain excess oil.
