  • 2 cups chopped cucumbers (unpeeled)
  • 2 cups chopped sweet peppers (red, yellow, orange, or green)
  • 2 cups chopped zucchini
  • 1 cup chopped onion
  • 4 cups chopped seeded peeled tomatoes
  • 3 cups white vinegar
  • 2 cups granulated sugar
  • 1 tablespoon mustard seeds
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon ground cloves

Instructions

  1. The night before canning, dice cucumbers, zucchini, onion, and peppers. Soak them in a large bowl of water with pickling salt.
  2. Drain and rinse the vegetables thoroughly the next day to remove excess salt.
  3. Chop tomatoes and remove seeds as much as possible.
  4. In a large saucepan, combine tomatoes, vinegar, mustard seeds, turmeric, cinnamon, allspice, and ground cloves. Bring to a boil while stirring frequently.
  5. Lower the heat and let it simmer for about 30 minutes.
  6. Add sugar and drained vegetables; return to a boil and simmer for an additional 20 minutes until thickened.
  7. Fill sterilized jars with the hot mixture while boiling hot and seal properly.
