  • 4 large egg yolks
  • 2 1/2 cups heavy whipping cream
  • 2/3 cup light brown sugar
  • 1/3 cup cornstarch
  • 1/2 teaspoon salt
  • 1/2 cup honey
  • 2 teaspoons vanilla extract
  • Flaky sea salt (for topping)

Instructions

  1. Prepare the pie crust in an 8-inch or 9-inch pan, then chill while preparing the filling.
  2. In a medium saucepan, combine heavy whipping cream, brown sugar, cornstarch, and salt over medium heat. Stir until it reaches a rolling boil and thickens.
  3. Temper the egg yolks by whisking in small amounts of the hot cream mixture gradually until fully combined.
  4. Return the mixture to the saucepan, add honey and vanilla extract, and stir until smooth.
  5. Pour the custard into the chilled pie crust.
  6. Preheat oven to 375°F (190°C) and bake for 40-45 minutes until slightly browned on top.
  7. Allow cooling at room temperature before refrigerating until fully chilled.
  8. Before serving, sprinkle flaky sea salt on top.
